N2  - In the Philippines, tablea holds a special place as both a cultural treasure and a culinary delight (Tababa, 2023). Tableya is one of the traditional cacao tablets (tableya) that are locally produced in Cebu that highlights the region's dedication to preserving its rich culinary traditions. Howerver, there was no standardized procedure for making tableya. This study aimed to bridge this knowledge gap by documenting the traditional methods used by Cebu's tableya homemakers. The research seeks to develop a standardized procedure through an observational checklist that maintains the essence of tableya while ensuring consistent quality
